[September 12, 2025, Macau] MGM continues to reinforce Macau’s position as a UNESCO Creative City of Gastronomy with the latest installment of its acclaimed “Gastronomic Journey with Star Chefs” series. On September 26 and 27, Aji at MGM COTAI will host an exclusive four-hands dining collaboration between two Michelin-starred chefs, Executive Sous Chef Pan Sihui of Aji, and Chef-owner Sun Kim of Singapore’s Meta. United by a shared passion for French culinary techniques accentuated by Asian soul, the chefs will flaunt their savoir-faire and experiences cultivated in Macau and Singapore — two of Asia’s top dining capitals.
Meta, short for “metamorphosis,” is a restaurant defined by evolution. Rooted in Korean cuisine, Meta transcends tradition with a contemporary and personal interpretation of flavors shaped by Chef Sun Kim’s multicultural background. Under his leadership, Meta has earned two Michelin stars in 2024 and has been ranked in Asia’s 50 Best Restaurants for five consecutive years. Guided by nature and creativity, META’s seasonality-driven tasting menus are constantly evolving, with signature dishes such as Jeju Abalone with Kamtae and Lily Bulb, as well as Chawanmushi, which exemplify Chef Sun Kim’s commitment to innovation and storytelling through food—each course a narrative of his personal and cultural journey.
At Aji, Chef Pan Sihui continues to push the boundaries of “Asian Bistronomy”, combining seasonal ingredients from across the global with advanced culinary techniques to create refined dishes that pay homage to his roots of Chinese and Singaporean background. Dishes include Blue Lobster, paired with a French yellow wine sauce infused with laksa leaf and hand-pulled yuzu somen noodles. Another highlight is the charcoal-grilled Wagyu Short Rib, cured with Koji for 72 hours and served with Nyonya-style pickles and black curry.
Together, the two chefs will meticulously present a six-course lunch menu available exclusively on September 27, and an eight-course dinner menu served on both September 26 and 27. The lunch is priced at MOP 1,288 per person*, while the dinner is MOP 1,888 per person*.
