A Silk Road Culinary Journey Through Artistic Hot Pot and Modern Dunhuang Cuisine
Continuing its exploration of the cross-disciplinary dialogue among gastronomy, art and culture, MGM will present “Enchanting Dunhuang”, the third chapter of its “Silk Road Art Feasts” series, at Enchanté, MGM MACAU, on June 11 and 12. Following the Chengdu chapter, “Taste from Chengdu” and the Xi’an chapter “Flavor of Chang’an”, this edition draws inspiration from Dunhuang, a cultural treasury of the Silk Road, and embodies MGM’s vision of bringing art to the table. Chef de Cuisine Ye Hui of Enchanté will join hands with Chef Mark Xiao, a pioneer of modern Dunhuang cuisine, to present an immersive dining experience that brings together artfully presented seafood hot pot and contemporary interpretations of Dunhuang flavors. The menu takes guests on a gastronomic journey through the history and cultural heritage of the Silk Road, while highlighting the distinctive character of Dunhuang cuisine.
Born and raised in Dunhuang, Chef Xiao draws profound inspiration from Silk Road culture, grotto art and the rich heritage of Northwest China. Having also studied Western cuisine, he seamlessly integrates refined French techniques with local ingredients and cultural narratives, pioneering an elegant and modern expression of Dunhuang cuisine. Chef Ye, who hails from Shaanxi, brings over two decades of culinary experiences and has long specialized in the art of seafood presentation, while continuously exploring the intersection of tradition and modern gastronomy. Their collaboration at Enchanté resonates with the restaurant’s signature approach to premium Chinese dining, which celebrates both northern and southern hot pot traditions and refined Chinese cuisine. Combining classical Chinese elegance with modern luxury, Enchanté showcases the form, color and flavor of premium ingredients through innovative techniques, offering a fresh perspective on the art of Chinese dining.
