Chún at MGM COTAI invited Liang Jianyu, Executive Chef of Fa Sing Garden, Guangzhou, to team up with Tam Yim Chan, Executive Chef - Chinese at Chún, in a fabulous two-day Cantonese feast. Chef Liang, former executive chef of the three-diamond Black Pearl-awarded Jade River, , led Fa Sing Garden earned a place in the 2023 Michelin Guide Guangzhou. Tam has spent years perfecting the art of blending classic Cantonese kitchen craft with contemporary gastronomy elegance at Chún.
Curated Dishes: Heritage Infused with Modern Ideas
The dinner menu, co-crafted by the two culinary experts, delivered a perfect balance of heat and seasoning. Liang’s Stewed Beef Brisket with Intangible Cultural Heritage Radish was crafted using century-old cooking methods, with a broth that was intensely flavorful but light on the palate. Chef Tam’s Braised Fish Maw with Aged Preserved Radish in Chiu Chow Style was made with deep-sea fish maw and 20-years-old preserved radish, revealing multiple layers of taste.

The dining room retained Chún’s signature elegance, with understated wood tones and soft lighting highlighting the refined style of Cantonese dishes from both kitchens. The two chefs crafted the dishes at the open counter, ensuring every bite reflected the delicacy of their techniques and the ingredients. Throughout the meal, diners could feel the precision and meticulous attention of fine culinary craftsmanship.
