Four-Hand Dinner: Weaving a Dialogue of Modern Asian Flavors
At MGM COTAI’s one-Michelin-starred restaurant Aji, a vivid four-hand banquet came alive. Chef Kim Sun of META, a two-Michelin-starred restaurant in Singapore, joined Aji’s Executive Sous Chef Pan Sihui to stage a modern gastronomic performance for Macau. It was a show that transcended borders and cultures, half infused with the warmth of Korea, and half imbued with French elegance. The result was a burst of flavor without precedent.
Contemporary Korean x Poetic French: A Flavorful Duet
A leading figure in Korea’s contemporary dining scene, Chef Kim integrated the spirit of traditional Korean cuisine with the delicate savoir-faire of French and Japanese cooking to produce thrilling layers of flavor.
Aji’s Chef Pan reinterpreted Asian flavors using French cooking techniques, with precise knife work and layering textures that elevated ingredients to dazzling heights.
Star-Studded Collaboration, Two Nights Only
The four-hand feast was the ultimate expression of trust and synergy between the two chefs. They worked closely, overseeing everything from ingredient selection to food temperature to the timing. Then they crafted their own signature dishes, melding Eastern and Western techniques to create a boundary-pushing dining experience.
The “Gastronomic Journey with Star Chef” series continues to bring together celebrated chefs from around the world, using food as a universal language to unite cultures and flavors across the dining tables of Macau.
