Aji was in the spotlight in May when its Michelin one-star Executive Sous Chef Pan Sihui teamed up with Shane Osborn, the chef-owner of Hong Kong’s Arcane, for their debut four-hands collaboration. This edition of the Gastronomic Journey with Star Chef series made waves in the contemporary dining scene, as the two chefs - with distinctly different techniques and cultural backgrounds - came together to showcase a star-lit harmony of French minimalism and Asian elegance.

Hailing from Australia, Chef Osborn is celebrated for his ingredient-driven philosophy. Under his leadership, Pied à Terre in London earned two Michelin stars. In 2014, he founded Arcane in Hong Kong, which has held Michelin one-star status for nine consecutive years. At Aji, Executive Sous Chef Pan reinterprets Asian flavors through refined French techniques, earning the restaurant first Michelin star in 2024 and establishing it as a benchmark for contemporary cuisine in Macau. When the two culinary minds met, their flavors, philosophies and cultural prospectives sparked unexpected brilliance.

The collaborative menu was a tribute to ingredient purity and cross-cultural dialogue . It featured a six-course lunch and an eight-course dinner, each revealing layers of flavors stemming from two different worlds and yet seamlessly blended in harmony. Highlights included the Antarctic Toothfish with a unique sauce combining Singaporean sambal sauce and Vegemite from Australia, achieving a subtle balance of pungency and umami. Chef Osborn’s signature 7+ Mayura Wagyu Rump Cap was paired with multi-textured sauces that embodied the power of minimalist cooking. Chef Pan masterfully combined the French ballotine (deboning) technique with the Cantonese crisp-skin technique to create the King Pigeon with Malt Glaze and Fermented Pear, a wonderful interplay of savory, gentle acidity and crunchy notes that captured the very heart of East-West fusion.

In the kitchen, precise control of heat and attention to detail forced a silent rapport between the chefs. At the dining table, a cross-cultural dialogue of taste and aesthetics unfolded quietly. This was Aji x Arcane at its most captivating. Through the purest language of cuisine, the chefs translated their imagination into remarkable flavors.
