Aji and NAE:UM Come Together for a Two-night-only Culinary Collaboration at MGM COTAI

MGM continues its “Gastronomic Journey with Star Chef” series on October 16 and 17 at Aji, MGM COTAI, bringing together Pan Sihui, Executive Sous Chef of MGM COTAI, and Louis Han, Chef-Founder of Singapore’s NAE:UM. Each leads a MICHELIN One-Star restaurant, and together they will present a “double twist” culinary dialogue that bridges cultures and contemporary perspectives, with Chef Pan’s refined expression of Asian flavors converging with Chef Han’s modern interpretation of Korean cuisine in a specially curated two-night-only degustation dinner.

Though shaped by distinct culinary journeys, Chef Han and Chef Pan share a passion for reinterpreting their cultural roots through a contemporary lens. At NAE:UM, Chef Han draws on experiences across Korea, the Middle East and Singapore, combining modern techniques and global influences to present a refined expression of Korean cuisine. His innovative approach earned him the MICHELIN Guide Singapore Young Chef Award 2022, while NAE:UM has retained One MICHELIN Star since 2022 and was ranked No. 45 on Asia's 50 Best Restaurants 2026.

At Aji, Chef Pan draws inspiration from Asia's diverse cultures, ingredients, and spice traditions, particularly those rooted in his Singaporean heritage, translating them into refined creations through precise technique and a seasonal philosophy. He received the "One Knife" distinction at The Best Chef Awards 2025, while Aji has retained One MICHELIN Star for two consecutive years and earned One Diamond in the Black Pearl Restaurant Guide. United by a shared commitment to innovation, the two chefs present a collaboration that celebrates the creativity and evolving landscape of boundary-pushing Asian gastronomy.

Featuring the finest seasonal ingredients, the eight-course menu will reflect the chefs’ distinct culinary inspirations. The special collaboration menu is priced at MOP 1,888* per person, with a sommelier-selected pairing available for an additional MOP 650*.
