[Thursday, May 5] The savoir-faire from the inimitable Edomae nigiri omakase experience has emerged as a novel paradigm of dining with the new sushiya restaurant, SUSHIDAN at Rossio, MGM MACAU, the only SUSHIDAN venture outside of Tokyo, under the leadership of Chef Manato Ueno.
An evolution of renowned sushi restaurant Hakkoku in Tokyo by Chef Hiroyuki Sato, SUSHIDAN is at the helm of Chef Sato’s protégé, Chef Manato. Progressing into a sushi master himself, Chef Manato returns to Macau after a revered sushi pop-up in 2019, which has garnered vast popularity in town. At SUSHIDAN, Chef Manato greets diners with traditions of Edomae nigiri omakase experience — a substantial aspect of quintessence Japanese dining culture — fused with playful twists of his own that captures modern-day whims and palettes.
SUSHIDAN at Rossio is the playground where Chef Manato showcases the art of perfecting balance among traditions, taste and visual appetite through honed craftsmanship – that every single piece of nigiri served is precisely made with utmost attention to detail and great respect to traditions. Chef Manato prepares two different mixtures of Shari (sushi rice) with his own formula of vinegar, balanced to best complement the characteristics of the customized blend of rice grains meticulously selected by the chef according to the seasons. All of these works put into perfecting the Shari is to bring forth the freshness from the finest catch of each season – though Chef Manato is physically located in Macau, he still adheres to his decade-old practice of contacting his Japanese fish suppliers from Tokyo’s Toyosu Fish Market every early morning to reserve the top-quality catch. With the chef’s experienced fish handling techniques, fish-aging, and curing, to name a few, Chef Manato strives to impress his guests by thoughtfully eliciting the peak flavor of every kind of fish served in SUSHIDAN’s omakase dinner.
SUSHIDAN at Rossio opens every evening except Mondays, serving a variety of sushi sets, an exquisite yet fun-filled Japanese dining experience where cultures intertwine and camaraderie is celebrated. For enquiry and reservation, please contact (853) 8802 2466.
