The curtain of the grand feast at Imperial Court has fallen, but all the flavors still linger in diners’ memories and on their palates.
The Gastronomic Journey with Star Chef series opened a new chapter in Chinese cuisine. For the first time, MGM proudly welcomed Yang Yanbin, Executive Chef of Hokkien Cuisine Restaurant, to team up with Homan Tsui, Executive Chef - Chinese of MGM MACAU. Together, they crafted an artistic and innovative banquet, blending the distinctive flavors of Lingnan and Fujian cuisine.
Chef Yang, a Quanzhou native who won the Chengdu Michelin Guide Young Chef Award in 2024, is the chef-owner of Hokkien Cuisine Restaurant. In 2024 and 2025, the restaurant was awarded one Michelin star and one diamond in the Black Pearl Restaurant Guide. Integrating Fujian ingredients with Sichuan techniques and modern presentation, Hokkien Cuisine Restaurant expertly reveals the profound flavors shaped by Fujian’s unique natural environment. Chef Tsui of Imperial Court is equally adept at showcasing the spirit of Lingnan cuisine and the refined beauty of Cantonese dishes through meticulous craftsmanship.
The four-hand menus were highlighted by spices, artisanal cooking techniques and tea culture, which were connected to the food culture of Quanzhou and Macau. Five appetizers made with fresh coastal ingredients effectively outlined the starting point of the Silk Road, while the main dishes that followed were characterized by Lingnan and Fujian cooking techniques and tastes.
Chef Yang presented his signature dishes, the acclaimed Braised Sea Cucumber with Ginger and Steamed Blue Lobster with Satay Sauce, both rich yet fresh. Chef Tsui’s Double-boiled Sea Whelk Soup with Fresh Yellow Fungus and Seaweed and Fried Glutinous Rice with Termite Mushroom and Chinese Preserved Meat highlighted the delicate elegance of Lingnan culinary art. The desserts paid tribute to the Maritime Silk Road with Sweetened Rouge Guava Soup with Basil Seed and Baked Pepper and Sesame Pastry - the ingredients of guava and pepper were brought to China via the ancient trade route.
