MICHELIN-starred Restaurant Angler Debuts in Asia at MGM COTAI for Two-Day Only Four-Hand Collaboration with Grill 58

MGM’s acclaimed “Gastronomic Journey with Star Chefs” series returns on August 21 and 22 with an extraordinary cross-continental culinary collaboration. Grill 58 at MGM COTAI, renowned for its signature culinary expression of flame, charcoal, and smoke, will partner with Angler, the acclaimed MICHELIN-starred seafood restaurant from San Francisco, California, U.S., which has held one MICHELIN Star for seven consecutive years, to present an exclusive two-day four-hand dining experience.

Marking Angler’s first-ever guest chef collaboration in Asia, Joe Hou, Chef de Cuisine of Angler, and Basil Yu, Chef de Cuisine of Grill 58, will bring together their distinctive culinary philosophies in a menu that showcases the finest seasonal seafood and premium meats through refined techniques including live-fire grilling, smoking and dry-aging, offering guests a rare opportunity to experience the signature flavors of both restaurants in one exceptional feast.

Helmed by Chef Joe Hou, Angler is situated along San Francisco’s waterfront and is renowned for its masterful use of seasonal Pacific seafood and precise command of fire. Having honed his craft at several three-MICHELIN-starred restaurants in Spain, Japan, Denmark, and United States, Chef Joe brings a distinctive perspective, drawing on his Chinese cultural heritage into contemporary dishes defined by nuanced flavors, refined techniques and a deep respect for the natural character of each ingredient. At Grill 58, Chef Basil shares a similar devotion to live-fire-led gastronomy. Equipped with a Spanish-made enclosed charcoal grill and an adjustable-height charcoal hearth, the restaurant allows for meticulous control of heat and temperature, layering ingredients with refined smokiness and complexity. Bound by their dedication to the craft of live-fire cooking, the two chefs will use fire as their common language to create an extraordinary feast that blends Eastern and Western inspirations in Macau.

For this exclusive collaboration, the two chefs will visit Macau’s local seafood markets to handpick the freshest catch of the day and create exclusive dishes inspired by their market finds, reflecting their shared commitment to seasonality, provenance and ingredient quality. The two-day-only dining experience will feature a series of limited-edition collaborative offerings. A particular highlight is the 14-Day Dry-Aged Duck Quartet, from Grill 58’s Himalayan pink salt aging room. This four-hand creation comprises Woodfire Roasted Duck Breast, Duck Leg Confit with Rice, Grilled Duck Gizzard Skewer, and Consommé with Black Truffle, showcasing the chefs’ mastery of dry-aging and fire.

Chef Joe will also showcase mantis shrimp, a rarity in North America, pairing it with Asian spices to craft the time-limited Grilled Mantis Shrimp with Coconut Swarnadipa. Guests can also savor Angler’s signature dishes, including Radicchio Salad, which is seasoned with handmade allium X.O. sauce and beet juice reduction. Also, its signature dessert Milk Soft Serve with Candied Coco Nibs, Ember Caramel and BBQ Sea Salt offers a taste of the restaurant’s distinctive wood-fire cooking philosophy. Chef Basil pairs smoked caviar with fresh razor clams, complemented by burnt lemon and yuzu somen noodle to create a refreshing summer dish that showcases the chef’s creativity and craftsmanship in celebrating seasonal ingredients.

The five-course tasting lunch is priced at MOP 680 per person*, while the eight-course tasting dinner is available at MOP 1,280 per person*. Guests may also enjoy a mystery special dish prepared à la minute using the freshest seafood of the day for an additional MOP 300 per person*.
